it's been said sensory elegance 
tastes in between the lines
so why did we not know

just to grant a name 
veiled and secretly 
so few understood
until mr. Ikeda san
 reveled a culinary mystery
those missing vowels included
mushroom parmesans glutamates
shellfish tomatoes sea vegetables
 wa;nuts some would say coffee
even vegemite makes the cut
so desire's exquisiteness 
lays subtlety between
sweet and sour not
salt or bitter 
umami
